Following pre-treatment, the whey is subjected to various separation techniques to obtain the right composition of milk sugar, minerals, fat, protein and water or to separate specific protein fractions.
Further separation may be applied to increase the purity of, for example, alpha-lactalbumin – an important protein in infant formula.
